Omelette Breakfast

So I had a little bit of my jalapeño cream left in the fridge; So I decided to make me a good breakfast.

Ingredients

1 jalapeño pepper

2 eggs

3 slices of cheese (your choice, I used Oaxaca (string cheese) cheese)

3 bacon strips (or more if you like bacon like me)

1 tortilla

fruit (I ate cantaloupe)

Some sour cream (I used local organic sour cream)

cooking oil (i use vegetable or canola)

salt & pepper

for the jalapeño cream sauce

In blender put about 4 spoonfuls of sour cream; chop the jalapeño and add to blender (you can add more sour cream if needed and put less jalapeño if you don’t like spicy stuff) blend until cream turns light green and there’s no more chunks of jalapeño in it a few little pieces left is ok

Omelette

prepare all 3 bacon strips in the microwave (or pan but its faster in the microwave; use a microwavable bacon tray and cover with a paper towel this will make your bacon crispy) put in microwave for about 3 1/2 mins. preheat your frying pan or cast iron and when its warm put some cooking oil in it don’t be afraid to put plenty. crack both eggs in a bowl and whisk them with a fork (unless you want to wash a whisk) and put in your pan; grab a piece of bacon and crumble it on top of the eggs, don’t stir or scramble. Add a couple of slices of cheese in there too. you can add the leftover bacon grease in there it will add flavor. by this time your eggs are probably done on one side and the cheese has probably started to melt so go ahead and with a spatula fold the eggs one side to the other as if you were folding a piece of paper in half; and leave for about a couple of mins there; flip your omelette and season with salt and pepper (just a pinch)

quesadilla

add the tortilla to the side and make sure its damped in the oil from both sides then add your slice of cheese and fold flip over and over until cheese is completely melted

presentation

place your omelette in plate, place bacon strips, place desired fruit, place quesadilla and finally drizzle the cream sauce on top of the omelette add a couple of parsley leaves for decoration if you do it in a cast iron your omelette will look a little black like mine is in the picture, that’s the seasoning and makes the eggs taste delicious, you can store the remaining jalapeño sauce for future use; I like to put it on fish, but that’s another recipe 🙂 enjoy
